When I look at the family vineyards, I see the same horizon my grandfather Rocco looked at. I believe that this land does not belong to us, but has been entrusted to us to be cared for.
This is why we have chosen the path of organic farming: not to follow a trend, but to listen once again to the breath of the soil. For us, organic farming means eschewing chemical shortcuts to rediscover nature's balance. Every row thus becomes a small ecosystem where grass, flowers, and vines coexist in harmony.
We intervene with respect and patience, protecting biodiversity, because we are convinced that only healthy and vibrant land can produce a wine that truly has the soul of Canelli. It is our way of honoring our roots, handing down an intact and genuine territory to the future.

In the cellar, we are undergoing a process of constant evolution, a continuous journey where we are committed to reducing human intervention more and more each year to make way for nature. It is not a change that happens in an instant, but a thoughtful transition that we respect wine after wine, tank after tank.
Our goal is maximum subtraction: we are progressively moving our production towards spontaneous fermentations, relying on the indigenous yeasts of our vineyards to enhance the identity of each vintage.
In this journey of technical rigor, we are orienting our winery towards an increasingly restrictive organic vision. For several of our labels, we have already chosen to minimize all additives, presenting unfiltered wines without added sulfites. This is a choice we intend to gradually extend, convinced that the purity of a wine comes from the ability to forgo the superfluous to preserve the essential.
